DEN x Esora Collaboration Dinner In Singapore

In June, Singapore’s Esora restaurant welcomed Japanese chef Zaiyu Hasegawa. Hasegawa, who helms the kitchen at Tokyo’s Michelin-starred DEN, put on a series of four hands dinners in collaboration with ESORA executive chef, Shigeru Koizumi, who’s also Japanese. The two chefs met during their time at DEN and together created a playful yet refined menu featuring crisp foie gras wafers, kinmedai with peas and smoked sweet potato ice cream.
